Smoked Ahi Dip

We smoked 20 lbs of albacore and froze a bunch. Now it’s time to eat them in many forms..

Ingredients

The basic ingredients are:

  • smoked albacore
  • mayo and/or sour cream
  • lemon juice
  • 1/4 cup green onions finely chopped
  • chili pepper powder
  • garlic power
  • (optional) soy sauce
  • (optional) salt and pepper

Methods

The ratio of each ingredients depends on

  • how much flavoring your smoke fish already has
  • how creamy you want your spread to be like

My smoked fish is usually well salted or soyu flavored with some lemon flavoring, so this is my favorite ratio of fish to mayo is 5:3.

  • In a blender: add 5:3 ratio of fish:mayo. here mayo can be just mayo or mayo + sour cream (mayo:sour = 2:1) and other ingredients and quickly blend them together. You don’t want to blend too much as it becomes too fine.
  • Add additional salt, pepper, chili pepper to taste
